Experience a Versatile Carbon Steel Pan for Everyday Cooking
This 27cm sauté pan is crafted from durable, food-grade carbon steel—no coatings, no films, just pure performance. Perfectly sized for cooking meals for 2–3 people, it delivers exceptional heat distribution and quick, even searing.
One-Piece Forging
Precisely forged from a single 3mm-thick sheet of carbon steel, with no welds or rivets, ensuring zero weak points. Engineered to handle intense heat for years without fail, it’s built to become your go-to pan.
Seasoning Guide
Your pan arrives unseasoned. For a long-lasting, natural nonstick surface, follow our easy seasoning instructions before first use.
Most cooks prefer to season their Brass & Steel pan themselves, but we also offer a hand-applied pre-seasoning option with high smoke point vegetable oil, so it’s ready to cook with straight out of the box. This is a fully manual process, not a factory treatment, so each pan will have slight variations in its finish, a mark of genuine craftsmanship that takes time and care.

Very well made, solid pan. Looks beautiful. After some hardening it gets a beautiful bronze colour. I've hardened it in oven with canola oil in 200 celsius, putting it 3 times for 1 hours, and it did great. Then started using it initially for eggs and meat, and after few times it got non-stick like glass, nothing remains on the surface and it's extremely easy to clean - just flush with some water. These properties, along with the retro-ish look, make it my favourite pan of all times. I also highly recommend getting the leather handle - it fits perfectly well and givies it this vintage, western-style look.
Thank you for this, Leszek, reading this was genuinely rewarding :)
The way you describe the seasoning process and how the surface evolved is exactly what we hope people experience, but it is rare to see it explained so clearly. That “glass-like” nonstick and quick cleanup is the point where carbon steel really starts to shine, and it sounds like you have taken it there properly.
There is also something quite satisfying about that bronze tone coming through over time, it gives each pan a bit of its own character.
And a quiet thank you for calling out the leather handle as well, it is a small detail, but we spent a lot of time getting the fit and feel right.
Really appreciate you sharing this in such detail <3
I don't even know anymore how many carbon steel or cast iron pans I have around my kitchen, But have to say that the Brass & Steel is really really good and the design is unique! Happy to have one, I'll try to use it as much as possible 😊 thanks!
Thank you Davide for your note, this means a lot to us! Happy cooking :)
Not sure if the bend in handle is standardized however the height of the bend on mine was a lot taller than it looks in pictures making the pan look odd and also making it feel heavier due to the weight displacement. Using a bench vice I straightened the pan out and created the bend closer to the rim level. At this point the handle length was unasthetic and creating unnecessary weight due to leverage, so I cut and shaped that. Now I'm incredibly happy with the pan it looks the business
Feel like the pan design could do with some tweaks and/or more pictures to show the true side profile.
Would love to see a small pan ~15cm from this company
Thanks a lot for the detailed feedback, Jack, really appreciate you taking the time!
It is amazing to hear how you approached modifying the handle, adjusting the bend and reshaping it to better suit your preference. That level of hands on refinement is not something we see every day :) and it is great to hear that you are now happy with how it feels and performs.
If you are open to it, we would genuinely love to see a picture of your modified pan, it would be a great source of inspiration for us as we continue to iterate on the design.
And thanks for calling out the idea of a smaller pan as well, a 15 cm version is definitely on our radar.
Appreciate you sharing this!
I had my doubts at first. Not knowing the brand as such. But boy, am i not dissapointed. J love this pan, it is awesome. Definitly my "go to " pan. everything i cook or bake in it is a succes. Nothing sticks to it. And the waybit came pre seasoned with clear instructions how to re-season it are awesome. Saving up for a nother one!
